Hamburger steak is a dish that originated in Germany in the first half of the 18th century. It is said that they came to Japan around the Meiji period. In the Showa period, it became widely used in households. It is enjoyed in many different arrangements, such as teriyaki, Japanese style, and demi-glace. In Japan, it is eaten with rice or sandwiched between bread. When I was at my parents' house, I served hamburger steak to my family several times. This is a memorable recipe that my family said was delicious.

Ingredients           This recipe yields 2 servings.

(Putty)

  • Minced meat                200g
  • Onion                           1/4piece
  • Egg               1piece
  • Milk                              tablespoon2
  • Bread crumbs              20g
  • Salt                              a little
  • Pepper                         a little

(Sauce)

  • Onion               1/2piece
  • Shimeji mushrooms      1pack
  • Water                            150㎖
  • Ketchup                         tablespoon4
  • Worcestershire sauce   tablespoon3
  • Japanese brown sauce  tablespoon1  
  • Consomme powder  teaspoon1

 

Procedures

☆Make the putties

  1. First, chop the onion and soak the bread crumbs in the milk.
  2. Second, put all putty ingredients in a bowl and mix well until smooth.
  3. Third, divide into 2 pieces and roll into oval shape to remove air.
  4. Next, put ingredients (from step 3) in a hot frying pan with a hollow in the center and bake over medium heat.
  5. When both sides are browned, take them out.

☆Make the sauce

  1. First, Cut the onions into wedges, and cut off the stems of the shimeji mushrooms.
  2. Second, Stir-fry the onion and shimeji mushrooms (from step 6) over medium heat.
  3. When the onion becomes soft, add the water, the ketchup, the worcestershire sauce, the Japanese brown sauce, and the consomme powder.
  4. Put the patties and cover and boil, occasionally adding sauce to the hamburg steak.
  5. After about 10 minutes, put it on a plate.

Tips for juicy burgers ↴

☆Cut the onion into small pieces to prevent cracks on the surface
☆Refrigerate meat until ready to use
☆Mix the putty well until it turns white.
☆After shaping the putty, remove the air inside.

 

This recipe is easy to make with ingredients you have at home. You can enjoy it with various kinds of sauce. If it's not a stewed hamburg steak, stick a bamboo skewer in the patty to cook it all the way through. I would like to serve it to my family when I return to my parents' house.
